OK, so I have a unit of Dwarf Thunderers and I am going to start painting them soon. For a list, would Josef Bugman be a good character to take fluff wise?

Actually I don't know the rules at all for Bugman, but you've got to like guys that drink beer while they fight!
As for competitiveness, I recomend a Runelord on an Anvil. Thorek is typically banned at tournaments, so shy from him. Load up on magic defense things.
Eric had success with hordes of great weapon warriors backed by solid artillery and some thunderers. A gyrocopter is nice for threatening enemy warmachines, march-blocking, redirecting, etc. Remember if you put a rune on a warmachine, it fires magical shots...handy for those of us with lots of ethereals. Cannons and stone throwers are money. BTs not bad either.

Dwarves is one of those armies I'm not as familiar with, but I do know you can make some solid bricks, unkillable (nearly) characters and shutdown any magic phase (again nearly).

I remember them having some subtle tricks too...my favorite was some item that you could use at the start of an enemies turn, something like use it on an enemy character, and he has to charge the unit your guy is in...something like that. Now I'm on a Dwarf kick...going to fiddle with AB to see what I'd like at 2500

dwarves can be disgustingly good, especially when 8th edition came along. Thier charge ranges drastically improved, they can field huge blocks of excellent infantry, they still have great magic resistance and can field a wide variety of great artillery units.
dwarves > daemons
